1 tbsp. vegetable oil
2 c. cooked chicken strips
1/8 tsp. curry powder
1 small bunch scallions, chopped
1/4 small onion diced
3 cloves garlic, minced
1 c. sliced carrots, precooked
1 can chicken broth
1 pkg. coucous + spice packet
1 tbsp. fresh parsley or 1 tsp. dried parsley

Place vegetable oil in skillet along with chicken strips and cook until pink is gone.  Add curry powder, onions, garlic, and cooked carrots; cook about 5 minutes.  Add chicken broth and bring to a boil.  Stir in couscous and spice packet.  Cover with lid and allow couscous to cook for a few minutes.  Mix parsley in when done.
