Here are the recipes from dinner last night, just in case you didn't get a copy.
Cranberry Chicken
5 lbs. chicken breasts or tenderloins
2 cans whole cranberry sauce
1 bottle Russian dressing
1 pkt. dry onion soup mix
Layer chicken pieces in plastic or glass container. Combine cranberry sauce, Russian dressing and onion soup mix. Blend well. Pour over chicken pieces and marinate overnight. Transfer chicken and marinade overnight. Transfer chicken and marinade to baking dish. Cover and bake at 350F for 1 hour and 15 minutes. Remove from oven, allow to set slightly. Serve with rice. Enjoy!
Rice Pilaf
2 tbsp. butter
1 c. rice
1/4 c. minced onion
1/3 c. minced celery
3 c. hot chicken broth
2 tbsp. chopped parsley
1/4 c. slivered almonds
Combine butter, rice, onion and celery. Stir and cook until lightly browned. Add broth, cover and simmer. Add parsley and almonds just before serving.
Spinach Salad
1 (10 oz) bag spinach
1/2 small red onion, sliced thin
1 (small) can mandarin oranges or sliced strawberries or 1 bag of craisins
1/2 c. slivered almonds
Poppy seed dressing
Toss gently
Poppy Seed Dressing
2/3 c. vegetable oil
1/2 c. sugar
1/4 c. vinegar
1 tbsp. + 1 tsp. poppy seeds
1/2 tsp. salt
Combine all ingredients and pour over salad.
